A one-day course designed to cover the minimum requirement for anyone involved in, or connected with, the handling of food or beverages. It may also be appropriate for people whose work requires them to enter catering premises. For employees in the catering and hospitality sector, it supersedes the Foundation Certificate in Food Hygiene.

The syllabus includes an introduction to food poisoning and elementary bacteriology, sources of contamination, control of hazards, HACCP systems/SFBB, food storage and temperature control, personal hygiene, basic cleaning and disinfection, food premises design and basic pest control.

A twenty question multiple choice paper will conclude the course. Pass mark 13/20.

The following options of Level 2 Food Safety training are available:

  • On site
    Highfield Level 2 Award in Food Safety Course, presented on site (one day). No minimum group size, maximum 20 (or as current Covid restrictions dictate).
    Need to be seated, preferably with desk/table space.
